If you’ve followed our journey for a while, you know that The Fabulous Campbell’s have two major loves: the open road and a high-quality local haunt. This week, we took a trip down memory lane (and Mainstreet) to visit an old favorite that’s back in action: Pub 819 in Hopkins, MN.
As many of you know, Pub 819 suffered a devastating fire a while back. Watching a local business go through that is tough, but seeing them rebuild and reopen their doors? That’s the kind of resilience we love to see.
The Rebuild & The Vibe
Walking back in for the first time since the rebuild felt like catching up with an old friend. The space looks fantastic, but it hasn’t lost that welcoming, neighborhood soul that made us fans in the first place.
One thing that hasn’t changed? The service. The staff remains as friendly and attentive as ever. In a world of QR codes and “order at the counter” spots, having a real person who actually cares about your experience makes all the difference.
What’s in the Glass?
We weren’t looking for a full meal this time around—though, let’s be honest, their food has always been fabulous in the past and we’ll definitely be back for a burger soon. This trip was all about showing some love and grabbing a few rounds.
- Mike’s Choice: I kept it classic and crisp with a Tito’s Vodka and soda with a lime. Clean, refreshing, and perfect for a casual afternoon catch-up.
- Jennifer’s Duo: Jennifer leaned into the seasonal vibes with a Spiced Apple Cider, followed by a reliable Coors Light.
Whiskey Heaven & Beyond
If you are a whiskey enthusiast, Pub 819 is basically your North Star. Their selection is legitimately fabulous, and because of their reputation, they often land those very special, limited-release whiskeys that you can’t find anywhere else.
But it’s not just for the barrel-aged crowd. Their cocktail menu is creative and vibrant, and we were especially impressed by their mocktail selection. They are thoughtfully crafted and—bless them—reasonably priced, which is a rare find these days!

We talk a lot about “The Fabulous Campbell’s” lifestyle—the RV sites, the travel, and the food—but at the heart of it is supporting the people who make our communities great. Local businesses like Pub 819 are the heartbeat of towns like Hopkins.
